Coconut Oatmeal Cookies (and chocolate too)
Jax and I love to bake. When there’s “nothing” to do, there’s always something to bake. If we get bored or, I feel like she hasn’t done anything stimulating in a while I whip out all our baking ingredients and we work with what we have to create memories and messes, and sometimes some pretty tasty treats.
By far these have been our favourite concoction.
What you’ll need:
2 cups of oatmeal
2 cup (whole wheat) flour
3/4 or 1 cup brown sugar
1 cup butter
1 cup shredded coconut
Cinnamon to taste (I put lots)
2 1/2 tsp vanilla
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 bag of white chocolate chips (you can make these Easter themed by adding mini eggs instead)
Mix the wet ingredients together - I usually melt the butter or bring it to almost melted to ease the mixing process (wet ingredients include the brown sugar)
Mix all dry ingredients together and slowly add to wet mixture.
Once mixed together add the chocolate chips and mix in. - save 1/4 of the bag to place on top for aesthetic.
Spoon onto a greased baking sheet.
Bake at 350 for 8-10 minutes - I suggest taking them out of the oven at 8 minutes and allow them to continue to “cook” out of the oven to keep them moist. Oops, I said it “moist”.
